A Mini Digital Cookbook of Egg Alternative Recipes for the Ethical Gourmet

The Vegan Eggz Cookbook is a culinary guide to creating a wide variety of plant-based egg alternatives which closely approximate the aesthetic qualities of real cooked eggs and egg-based foods. These recipes are the result of my quest to create home-prepared egg alternatives that have the appearance, flavor and texture of real eggs but which can also be cooked like real eggs.

 

Please note that two mail order specialty ingredients are required for the functionality of the eggz recipes: Methylcellulose HV and Kappa Carrageenan.


Methylcellulose, marketed as Methylcellulose HV (high-viscosity) by Modernist Pantry, or Methylcellulose e-461 outside the United States, is a non-toxic and non-allergenic dietary fiber (an organic complex carbohydrate and primary structural component of the cell wall of plants and many forms of algae). There are many forms of methylcellulose available through the internet, but only the specific forms mentioned will work.


Kappa Carrageenan is a seaweed derivative commonly used in modernist cooking as a thickening, stabilizing and gelling agent. In this cookbook, kappa carrageenan is used specifically as a firming agent in the eggz recipes. It works synergistically with methylcellulose to give the eggz their egg-like texture. Kappa carrageenan is also used in the block cheese recipes in my Non-Dairy Evolution Cookbook, so you may already be familiar with this ingredient.
